The coconut biscuit has been a family favourite for as long as I can remember.
It's so simple yet so D-Lish!
Ingredients
250g Butter/margarine
1 cup Castor sugar
2 cup Desiccated Coconut
1/2 cup Maizena
2 Eggs
3 teaspoon Baking Powder
3-4 cup Flour
Method:
1. Beat butter and sugar until light and fluffy.
2. Add the coconut, maizena and eggs. Beat well.
3. Add the baking powder and enough flour to make a soft dough.
4. Roll out the dough on a floured surface. Roll out to about 1.5cm thick.
5. Use a fork and scrape horizontally. Cut out shapes using cookie cutters.
6. Sprinkle 100&1000's sweets over and brush with milk.
7. Bake at 180 degrees for 20-30 mins or until golden.
Mmmmmhhh! Cookies please!!
