Here are a few suggestion for the left overs.
1) Skip the rice, have the curry with some bread.
2) Add some pea's to the curry, boil it on the stove to a thicker consistency. Enjoy with roti or bread.

Chicken Curry
How indian am I really if I'm indian but haven't as yet shared a curry recipe with you??? *Gasp!*
Ingredients:
1 chicken cut into pieces
1/4 - 1/3 cup oil
1 large onion grated
2 tsp jeeru powder/ cummin powder
1 elachi/ cardamon
5 peppers
3 cloves
4 small cinnamon sticks
1 tbls ginger garlic masala
1- 1 1/2 tsp corse salt
1 tsp arad/tumeric powder
1 tsp chilli powder
1 tblsp dhana jeeru
1 1/2 cup liquidised tomatoes
3 medium potatoes cut into fours
1 3/4 cups boiling water
Mehod:
1. Heat oil in pot. Braise onions together with jeeru powder/ cummin powder, elachi/ cardomon, peppers,cloves and cinnamon sticks in oil until golden.
2. Add chicken to the pot together with the masala and salt. Braise.
3. Add the arad/tumeric powder, chilli powder and dhana jeeru. Braise again.
4. Add the liquidised tomatoes and potatoes. Cook until no water remains.
5. Finally add the boiling water and allow to cook until chicken is cooked and potatoes are soft.
6. Garnish with coriander.
Serve with rice.

Note: Dhana jeeru is a mixture of coriander and cumin powder with a ratio of 2:1. Two parts of coriander powder to one part of cumin powder.
Ginger garlic masala is made out of ginger, garlic and red chillies.
