HEALTHY GLUTEN AND SUGAR FREE CRUNCHIE RECIPE
CRUNCHIE
250 grams butter
4 tablespoons honey
1cup xylitol
1 cup rice flour
1/2 cup oat flour
1 1/2 cups dessicated coconut
3 cups gluten free oats
2 teaspoons bicarbonate of soda
Method:
1. Beat the butter until light and fluffy.
2. Add the honey and beat well.
3. Gradually add the xylitol, flours, coconut, oats and bicarb one ingredient at a time.
4.Pat flat into a greased oven tray.
6. Cut and once cooled drizzle with melted chocolate.

GLUTEN AND SUGAR FREE NOUGAT BISCUIT RECIPE
I love baking for mum. It's always a challenge and experimental since it has to be gluten and sugar free. Mum has been on this diet for over 4 years now.
Today's experiment: Gluten free and sugar free (well almost if you forget about the sugar in the nougat) nougat biscuits inspired by Wedgewood's Angels nougat biscuits. The recipe was adapted from niQi's Butter Nougat Biscuit recipe.
Ingredients:
250g butter
1/2 cup xylitol powder
3/4 cup Maizena (corn flour)
1 tsp vanilla essense
2 cups Natures Choice Gluten Free Cake Flour
110g Wedgewood macadamia nougat (chopped)
Method:
1.Preheat oven to 160 degrees celsius.

2.Beat butter and xylitol until light and creamy.
3.Add the maizena and vanilla essence. Beat well.

4.Add the flour gradually until a soft dough is formed.
5.Knead the dough for 1-2 minutes.
6.Add the chopped nougat to the dough.

7.Roll out the dough. Using cookie cutters cut out your desired shapes.

8.Bake for 20 minutes or until lightly golden.

PEPPERS FOR LUNCH
Stuffed Peppers
Ingredients
1/2 cup cooked rice
50g cherry tomatoes halved
1/2 carrot peeled and grated
1/4 cup cubed ghergikns
1/2 cup crumbled feta cheese
1 tablespoon herbs
2 bell peppers halved lengthwise and deseeded
salt and pepper
Method:
1. Preheat the oven to 180C
2. Grease a baking dish with 1 tablespoon olive oil.
3. Place the rice in a large bowl. Mix in all other ingredients except the peppers.

4. Spoon the filling into the pepper halves and place in a baking dish. Drizzle with the remaining olive oil and bake for 30 minutes until golden brown.
